You sure you aren't getting the egg to hot?

That is my only guess. Like I am getting bursts of hot VOC or something and it's burning the brisket. I need to just pony up for a controller.

My pork butts and ribs are spot on. I can make the ribs sweet and succulent, or a savoury/salty rub.

Yeah I'd look into getting at getting a new thermometer, preferably something you can mount grill level. Chunks are best, and definitely no need to soak.

So you're saying it will pour out thick white smoke for about an hour before settling down to translucent/bluish smoke?

I can create so much smoke its lethal to thd human face for about an hour. Longer if I soak chips and use those too. Then there is so little smoke coming out you wouldn't believe it. The egg requires so little air there is no visible smoke from a distance. Open it up and in seconds it will plume up.

You've got the fire just right then. The problem is most likely temperature. Pork butts are cake compared to brisket because of their much smaller surface area. Brisket you have to watch like a hawk. And even then you can mess it up.

My guess is it just has subtle heat flares that don't show up on the dome thermometer but are absorbed by the flat brisket. This attempt was the most "controlled". My gut said to take off earlier, but only 6.5 hours for an 8 pounder seemed insane.

The wet mop amd fat side down with worked well. It was just ready a bunch of hours early. I should have foiled it and put it in a towel and let it sit right then.

Instinct almost always beats a recipe..... oh well.

It was yummy. Thickened up the mop sauce and soaked it. Probably simmer all the carbony "burnt ends" and maybe add it to bag of chilly beans I habe hangin around.

. It doesn't, it meters the mass.

I know Ridgid makes some tools at the same Emerson location I work at.

The same factory builds some JL, Bazooka, RF, and Audiobahn.  The factory is only going to build whatever they are paid to.  I wouldn't give much comparision on which factory builds who's stuff

They are farmed out, of course, but not all to one cheesy hong kong factory.

Some of the Ridgid stuff is alright, others suck.  I would be tempted to buy Ridgid if I didn't have serious uses for it and lived close to the HomeDepot and didn't like top notch tools so much.  I've bought a few of their corded drills, not bad for how much we use them, which is hardly ever.  Mixing mortar in buckets and tensioning screw jacks is about all they get used for and they do an admirable job at those. 

 

I don't think I've ever hated a 4.5" angle grinder more than I hate my Ridgid though.  It sucks, crappy ergo, terrible vibrations, shit quality.  I killed the first one in less than 4hrs of grind time, the second hasn't died yet.  Metabo isn't much more money but they are worlds better in every aspect. 

 

At work we run Bosch cordless drills/drivers and haven't had a problem yet.  I won't branch out for the shop tools just so I can stay standardized on one battery and charger type.  I run Makita, my brother picked up some Ridgid stuff for a great price ~3yrs ago and hasn't had a single problem yet. 

 

Menards should have the 11% card at the checkout lane or at the service counter as you leave.

Plenty of mud today off-road. Really moist stuff, would barely stick to the car and I could leave rooster tails behind. 

 

Climbing the hill where I almost rolled it last year was fun, at some point I had very little traction and started going sideways toward a side of the slope where I found traction. 

 

Tires were down to 20psi, once I was back on the road they felt like jello

 

Took me 2 hours to clean all the mud from the car.
