Chicken Marsala? Cheap and easy sauce, I usually make it using the Boneless skinless and it comes out great.

I LOVE Marsala sauce!  Unfortunatelty, I have yet to find a local place that sells a good Marsala.

I make it, its extremely easy to make. But you can't eat wheat right??

Correct.

There are some recipes out there that use Corn starch and cream to thicken it. But not sure if it's the same.

Time to focus on the sauce, not the meat. I'd poach it in 170F water until it is 170. Then put it in something yummy.
