i am currently running 4 10's and i will be running 2 1200d's would i be better off running 1 amp per 2 subs or should i strap them both and run to all 4?

SAE-1200D or SAX-1200D?

SAE cannot be strapped. New SAX can be strapped, if the new SAX-1200D I would strap them to run to your woofers as long it's a 2 ohm mono load at the strapped pair of amps.

how about a single SAZ-2500D or 2 1200d which would perform better currently running around 1ohm but there all d2's so could change that as needed

I would go with the SAZ-2500D.

The advantage of strapping 2 amps is that you have only one amp (the master) to control, the 2nd(the slave) don't need no settings, it just gives power.

It may not be easy to adjust the settings the exact same way on 2 different amps.

But the 2500 is a better choice IMO.

Make sure to have a final load of 1 ohm for the 2500 or 2 ohms if you strapped 2 sax 1200D.

Good luck.

You may want to wait to see the results from Sundown on the new SAX-1200D. Looks to be quite impressive from the initial testing.
