why is it that no hair cut place can cut my hair correctly? I've been to 3 different shops in the last 6 months and each time when I get home my gf says "here let me get the scissors, they left some long hairs here and here and here....."

This is why I've stopped tipping until I find somebody who doesn't make me go through that and I repeat with them.
