Making some homemade pizza with the gf tonight. I'm sure I'll be asking for advice for next time (hint hint HAF cooking corner)

I threw my dough recipe up somewhere, was it not there?

Its there and I saw it, but it was short notice and she already had a game plan so I let her roll with it. Turned out great but next time we are going for the all from scratch approach. She loves making stuff from scratch. I remember you have said something about pizza sauce somewhere before too any pointers? Any random pointers on toppings as well is appreciated. I always like to hear the toppings or combinations I would never think of.

Also, since the lady wouldn't let me get her a kitchen aid mixer for Christmas all would have to be done by hand :P

Biggest hint I can give you is to make the dough the night before and allow a shit ton of time for it to warm up....part of the reason I bought ovens with 80F proof settings as I love me some real neopolitan pizza.

When you say shit ton, could that be pull it out of the fridge and cook 8 hours later? Maybe on a "cold" day?

I personally like wheat crust on my pizza.

My favorite pizza is wheat crust, with white sauce topped with onions, spinach, and feta. Garlic is aways a plus. :)

Dinner time! Tonites special, Blackened chicken tacos with black beans. Lots of onion, cheeze, sour cream, salsa, and alittle raw Aniheim pepper. Win, Win. :)

I have not had to shift since April. I liked it at first, but now I find myself wanting more control.

Paddles ftw.

I would love that simply for the fact that it would mean I would be driving an Italian or Malaysian work of art, but I would really prefer to bang a shifter through it's gates.

Speaking of shifting, what do you think about Hurst short shift kits ? I'm tempted to get one for the Jeep...boat rowing isn't my hobby. Do they have any parts that can wear fast ?

I don't know about the Jeep kits. All I know about is Mustang kits. My dad is old school and uses only Hurst shifters. All his Mustangs have Hurst shifters. I've never had any issues with them and they improve the notchiness of a stock shifter, but there are other shifters for Mustangs I would choose first.

i've got a Hurst in my Camaro and no complaints with it. SLP stuck them in their cars for most of the 4th gen F-body offerings

Well then, that's my next mod. It's a top shifting gearbox and the T56 looks like a top shifting box too so I assume the design is similar.

I was curious about wear and tear because Hurst wants $200 for one and sometimes they float around used, which means a better deal.

It's only a bit notchy when cold, inherent with the AX15 from what I hear..but the throw is looong :)

is the wheel, pedal, and shifter that awesome? I can only drive AT with the controller. Shifting is too much of a mess with the normal controller.

I do like the idea of the throttle. Then I can do something other than gass all the way down or all the way off. It would help when navigating some more complex turns that I can do faster than no gass but not full open either.

I like simple pizzas, one topping maybe two. Mine are thin enough though that you can eat two of them :)

The simple approach with sauce the better. First and foremost it should taste like tomatoes. My recommendation there is to buy San Marzano tomatoes from Italy. Definitely worth the $4. Some Kosher Salt, Fresh Basil (or Fresh Oregano if you prefer), Extra Virgin Olive Oil, garlic, and that is it. I make a paste with the garlic and the back of my knife (a press works for you as well) add a teaspoon of water and then add it to a pan with some olive oil. Medium heat until it is fragrant, DO NOT brown, and then add the can of tomatoes. Bring to a boil and then simmer for 15min. At the end of 15 add your chopped herbs and pull from the heat. Oh, the salt goes in with the garlic.

Yes, most pizza restaurants do exactly that. Err, most that are worth a shit.

Then you substitute wheat flour for half the normal flour :) I like blue cheese on wheat crust. Yummy.

If it's notchy when cold, change the trans fluid. That's what is causing that. You probably have a Synchromesh type fluid.

I haven't played mine yet, but my BIL has mine and he says you have to use the analog sticks for throttle control, so I would assume a natural motion of driving would be better than the controller.

I love me some Wurst! yum, yum. What Beer did you pair it with?

The local brew pub makes some wicked beer and cheese soup that they serve with pretzel.

I just mastered my blackening seasoning, if anyone wants the recipe.

A Czech lager/pils. Not convnetional, but I don't like wheat beer so conventional wasn't happening.
