Top...wt...how many post per page do you guys have it on? 10? F that, I am at the 40 post per page...makes reading a lot easier.

Germs = meh....what doesn't kill ya makes you stronger.

Here are the knifes BTW. I forgot I took some picks.

left to right it's stamped wusthof(sucks), forged wusthof next to that(nice but I'm now spoiled), Yanagiba (amazing slicer, I thought it would be too long and now I want a longer one), Deba (half hatchet half razor blade).

Thanks for the pics. Sweet knifes!! I wonder how the one sided blades would work for a leftie? The W and I are both southpaws. I am very interested in the sashimi knife. How long is this one, and how much longer would you buy?

Right now I am working with a super cheap block set. I generally use the 8" chef knife for protiens, and have started trying out the 7" santoku for veggies. I have to sharpen constantly.

At this point I think the best thing to do is buy a decent block set, and then buy a few specialty knifes. I know you guys will discourage buying a set, but I think I should start by getting the knifes everybody in the house uses up to par first. I am sure this will only wary my ignorace and force me to buy a nicer personal knife or two.

With that being said, I will find a decent block set that has forged blades and handles I like, and is in my price range. Then go from there. Long seems to be the motto for the workhorse knifes.

A set is a completely terrible idea. For 95% of my cutting I use ONE knife. The rest is detail work. If you truly think you need a set then you should take a knife skills class; otherwise, buy a chef's knife that fits you well and when you find out what you don't like to cut with it buy accessory knives.

Er'....its a gift for me, so I am trying not to be to picky. My logic is get the craptastic block set I have now replaced for everyday use. Then I will invest in my own 10+" Chefs knife for when I am in the kitchen. This will keep the kids off my knifes.

Why do you want your kids to use shitty dull knives? That is WAY more dangerous. Really NO ONE EVER should be a knife set. There is no way in hell it is the right choice for anyone. Installation is the key in stereos, fit is the key in knives. No two people cut the same. Don't be dumb. Take the same budget and buy a Chef's knife. REALLY.

A paring knife is a nice addition, but can be had cheap. I would argue that too sharp a paring knife makes them harder to use. I like to use my thumb as a knife stop and for that reason find myself using the one with the inferior edge on it, but it does fit my hands well. :)

understood. My wife and roomate don't use my knives unless I hand it to them actually.

I do appreciate the advice, don't think it was in vein. I now have something to set my sites on for personal knifes. Sounds like it should be well thought out purchase.

I also want a wood cutting board but the W keeps telling me the wood will hold germs. I have a glass one now.

Ugh, you are killing your knives :( Throw the glass away. Buy a wood board and then buy cheap as poly sheets to use on top of it for flesh. Wood is SO MUCH faster you'll be shocked. It cuts my prep time down in half.

glass is bad for knives

I like plastic but you have to throw them away after awhile

That siad I only like wood. I don't beleive in germs.

we have some plastic ones but I never use them.

You can find awesome cutting boards on ebay on the extra cheep.

Thank goodness someone else doesn't either. I've spent my entire life not worrying about germs and I rarely get sick.

I'd NEVER cut chicken on a wood board. I also don't really wash my cutting boards, but there is absolutely no reason to do so. Plastic sheet liners for cutting are 3 for $5 at Ikea.
