    If you are cooking a fillet, there is not enough fat for cast iron cooking without adding some extra. Redeye, maybe, but the fat would need to render and it's usually too hot and too fast for that to happen. I put a super light coat of olive oil on all my proteins. Sort of a two fold solution. First and most important is to make sure that you aren't setting down a wet piece of meat, second of course is to have some fat pre-render. Exceptions for ultra-ultra marbled steak, but that is then done over fire and not in a pan and usually sliced in very thin strips so it cooks/renders in seconds.

    Sear hot, then cook low. Real low isn't bad. Much harder to time if you use 300 or so but the rewards don't suck. I would imagine it really tough to try at 300. Do you use an internal thermometer? Sort of, I use a calibrated pointer finger.

    Meat should always have a light layer of fat on it. You should also press it into the pan as you want contact. It'll release when it's ready. When you say burn, do you mean beyond yummy burn?

    Really? What products was it you was seeing manufactured? I'm just curious. I've been in pretty much every hard drive subcomponent plant in asia including those that make PCB's for them. Also some other technology plants, but I can't share what they are due to an NDA with their mother companies here. Since you two clowns misread the op's post here is his quote "So not really looking for someone to help me pick a sub just to tell me any experiences they may have had with these subs, especially if you've used both and any thoughts, suggestions, concerns you may have." I posted exactly that. No slandering of SSA or any of SSA products. I posted facts and my thoughts on my experiences with SSA products and Sundown products. And since you brought it up, SSA products do have China produced parts in them. The Z.3 from Sundown has China products in it as well and both are built in the USA. M5 we can make every thread on this forum a battle ground if you like. I realize what the OP asked, but I also know how you are regularly confused so I wanted to clarify. Sharing experiences is fine, but he can't infer any details about the poster from the experiences. In no way was my response about the drivers, just clarification on the experience and what he should read out of it. As for the request to troll. Not something I'm interested in, but I can't imagine why you'd want to embarrass yourself.

In a little over 2 years, he went from engaged in Arizona, to engaged again in NY with 3 kids. That's why I was confused. Last I knew of his relationships he broke things off with Az.

I read your post and laughed. Ah, well it's all relative. Considering my average credit card bill per month exceeds $10k by a lot tracking what is where is only something I can do. At the same time, I have no idea what she does with her paycheck. Nearly all of it we save, but if she feels like buying something then so be it. Although regularly at the end of the month she take out of my account what she needs to replenish our joint account but that's safer.

    Last night would have been a epic hang out and I NEEDED a cigar.Was sitting in a beer garden in a small village after racing chucking German beer. They are having a festival tonight so ALL the farmers were making haybales and driving them right past us. And by right past I mean within 6' of where I was sitting. All the city folk were confused and I felt at home. Was awesome. Truly a memory. That sounds great. I'm jealous of your traveling. I think it would be good for me and my marriage if I was gone more. When you have time off we should do some night boating. Cigars and whisky style. Don't be jealous, that spurt only lasts a little while. If I change jobs it'll be more travelling.
