no tin foil, trim the fatty side of the brisket until the fat layer is maybe a 1/16" to 1/8" thick. 200-225 until it falls apart. I will trim it down them. Sometimes the fat is better than .5 inch. Thanks BTW

thats my guess, I use BGE coal in the BGE. I don't get it as bad on the ribs, but really ribs take 60% of the time, if that much.

Right now just a small portion of jack daniels chipped up whiskey barrels. I am going at about 200. Once I did ~180 once at about ~220. I will reset my temp gauge. Maybe it's been thrown off and getting too hot now. To describe the bitter smoke flavor might be better described and "burnt" flavor. It's not burned meat though as the meat is pristine, it's just getting thie odd coating.

Change of HOP subject. When cooking a brisket do you guys trim any of the fat off of the meat? Do you tin foil wrap the meat. I am happy with my ribs so far, but my brosket always has a rather large fatty portion. Pisses me off. If I cook to the level of rending every last drop of it, I end up with too much bitter smoke on the outside. I have been thinking about either cooking for a million hours and tin foiling, should help keep in a LOT of moisture too, or just trimming some fat from the get go. What are the HOPs thoughts?

sounds bad mang! ugh, the wine was so bad we were washing it down with PBR wowz. You need to convert to the wine box. Sangria white or red. It's a winner if you want cheep party booze. Girls will think you're a super hero, and 5 liters for 10 bucks is a really great shitfaced to dollar ratio.

WTF is it that when it gets cool one day they CRANK the heat. It was 80+ in my area one morning. that's redonkulus. And then people wonder why I wear a t shirt/flip flops/shorts to class. "Dude its like 60 outside" "Yeah but we aren't outside, are we?" Hell, I wore birks all winter in MN when in college. If you only have to walk two blocks, even in snow and -10 degrees shoes aren't necessary. birks FTW. I will be out in the winter grilling in my birks all the time.

Diamond wheel on a 4.5" grinder isn't enough to go through 1.5" slate?? Yeah... that's what I said. The grinder has a weird front that sticks out a bit on it though... and the disk is a bit used. Definately not cutting all the way through. I had to cut one of the bolts through the slate. Didn't go all the way through the bolt even. and what else is fucked about it is they use a soft soldier for the bolts to screw into. Not some nice bolt structure that gets clayed or waxed in... Solder. WTF?

My angle grinder isn't deep enough to cut through the slate either. so I will still be doing some hammer work on it. I really really effed up some vintage wood yesterday. WRECKED some great veneer. I felt heartbroken, even though it's of no use to for the forseable future.

verry hawt. I'm jelous. I haven't eben started to think about maybe possibly working on getting those l8's in the truck. Heck my q18 isn't even set up. Had that almost a year. SO LAZY. working on the home always gets the better of me.
