I have thrown thin flank or skirt right on coals before. I saw Alton "crazy" Brown do it, so I gave it a shot. It worked. Ruined one peice though as it turned into coal itself because I wasn't fast enough.

How long will one run before you have to add more coals to it if you are smoking something? From BGE I missed that Q also. I have smoked for 36 hours straight on a full load of lump coal and had coal left.

I have heard some resteraunts of using a 1800F method for searing. I've never used trufflebutter, but I usually put a pat of the regular stuff on anything I do in the kitchen, and sometimes the grill. I did a wagyu NY strip and it tasted like it was soaked in butter without anything.

Yeah you're only using 2 gigs. It's definately cool to have heardoom but man 8 gigs is a LOT of memoriez!

My machine may use less ram naturally as I have a raid controll processor too and stripe my drives so it may then just hold less in ram. I'm sure the Nvidiea also takes up almost all video work too.

What speed is the ram? It's not going to affect the speed though having that much ram. Especially since you still have to use the bridge. If it was one of the new i7 boards where you don't have to use the bridge and it's direct info it may be worth it. I don't knwo enough about that MOBO design though to even say it would be worth it then. It is cool to say you have it though and I have been thinking about getting more as I use mine as a server. I can run two HD screens (one is 1900 x 1200), a graphix intense game on one and windows with interwebs and apps open in the other and I don't even use my full 4 gigs of ram.

I think Sean said he built his for under 20 bucks. They have designs all over the place. BGE owners are crazy, you'll find all kinds of designs, and plans out there.

grill one side, flip, remove I missed this. Peng has it right. Use large grains of salt and then peper to taste. Kosher is good enough but I have a thicker chunk that I normaly use. It's most important on the fat. Salting properly is the biggest key. I had 3/4-1 inch choice ribeye for about 1 min 20 seconds then flip. Tried to make the pretty cross lines but at 800 everything sears, which is even better. It was a warm very red middle.

Last steaks I did were so hot I was easily a foot above the grill an I lost knuckle hair.

And it will do it outside covered in ice in -20 with 20 mph winds and not miss a beat.

I'm not sure what temp melts glass but I find chunks of it in the smoker any time I do a full burn of the coal and clean the BGE>

You can also sear steaks at surface of the sun temps. I've had mine easily at 800 degrees and probably a fair bit more. Temp gauge didn't read.

And don't get smaller than a large.

The steady heat control will put an oven to shame too. It's kind of sad when 2 simple vents can regulate and maintain heat better than modern ovens.

They are amazing. With the control of a stoker to regulate heat it's like have another oven. It makes the best pizza and smokes meat in a way that is just amazing. I can really tell the difference when doing butts. I use a realy thick rub with lots of brown sugar, and when I chop/pull the pork it almost becomes it's own sauce. The bark is wonderfull the smoke penitrates so well and it keeps the moisture in. Me and my wife realy think of it as one of the best INVESTMENTS not purchases but INVESTMENTS we have made. I've easily paid for it in what I saved vs going out for BBQ. For the winter when we remodeled and didn't have anything to cook on but the BGE for 2-3 months it was awesome. I can't wait to start trying pizza and bread on it.
