    Play with the flour to adjust the crust to your taste. You will love it, I just hope you have a mixer with a dough hook. Yeah I've got a good ole KitchenAid. I like a chewier crust so I'll be trying it with some bread flour to start. Hopefully I can use the recipe as a starting point and adjust it to my liking. If I get it down I might just have to find a better cooking method.

    My next cooking venture is to get a good pizza dough down. I've been working on it for years but I still can't get it right. I also have never made my own pasta which I'm going to try soon.

    The funny thing is at the same place I had one of the worst things that I have ever eaten. It was a smoked mozz it literally tasted like I was eating soft creamy wood.

    I usually use pancetta and more egg yolks than whites. It is one of my favorite dishes.

    Keep in mind that 4400 rms is almost twice what the DCONs are rated for.
